The restaurant, Coal Cellar + Grill, is focused around a charcoal grill and rotisserie and aim to highlight the very best South Australian produce in use within both inventive and classic local and international dishes. The meals are complemented with an extensive choice of 500 wine labels displayed in the cellar.

The hotel’s kitchen is kept busy with a constant stream of diners of visitors from abroad to local residents. “The restaurant and bars serve 200-400 covers a day, and if you include catering this could be as many as 3,000 covers a day”, says Peer Norsell, the hotel’s General Manager.

Regardless of where guests come from, they all desire high-quality Australian cuisine, on which the Hilton delivers.

“We want to be relevant to the local market”, says Peer. “So we designed the restaurant experience as a go-to place for guests who are looking for a quality meal and a fun time out without breaking the bank.”

To cater for locals, visitors and regular large functions at the Hilton, there are four kitchens at the hotel. Approximately 30 kitchen staff work across the 4 kitchens to ensure the high standards at the hotel are consistently met.

In The Kitchen

Dependable quality was a high priority when fitting out the hotel kitchens. General Manager Peer Norsell says Moffat was an easy choice to make.

Waldorf Bold boats a pasta cooker, 4 burners oven range, salamander on a bench top with a refrigerated base and a twin pan fryer.
